HEY! wHAT THE HECK IS SPON BEER? AS YOU MAY KNOW, EACH OF OUR WILD SOURS BEGINS ITS LIFE IN OUR KOELSCHIP, WHERE IT IS INOCULATED WITH THE WILD YEAST AND BACTERIA FOUND IN OUR NEIGHBORHOOD AND BUILDING. FROM THERE, WE OFTEN ADD YEAST TO KICKSTART THINGS AND POINT THE BEER IN A DESIRED DIRECTION, AND THIS HAS BEEN TRUE FOR EACH BEER WE’VE RELEASED SO FAR. BUT NOW, OUR PATIENCE IS ABOUT TO BE REWARDED AS WE PREPARE TO RELEASE OUR FIRST FULLY “SPONTANEOUS” BEERS (SPON), WHICH ARE EXCLUSIVELY FERMENTED ON THE WILD YEAST FROM THE ENVIRONMENT. fIRST BREWED IN LATE 2020, THESE BEERS SPENT YEARS IN WOOD BARRELS AND PUNCHEONS, SLOWLY MATURING. fROM THERE, LIKE ALL OF OUR SOURS, THEY WERE BOTTLE CONDITIONED ON COLORADO HONEY, AND THEY ARE FINALLY READY TO DRINK. We WILL BE choosING a series of flies ranging from basic to more complex, and all skill levels are welcome!
The end of the evening brings a loosely judged competition where prizes are awarded for Best, Worst, and anything in between. We supply all the tying materials and tools necessary to get those who attend twisting up flies. Your first pint is on us, so come on by and see what it’s all about!
